Chili Mac & Cheese

Ingredients:

0.25 kg (or 0.5 pound) ground beef
1 medium onion, chopped
1 green pepper, chopped
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon cumin
1 Tablespoon chili powder
2 cups water
1 ½ cups whole wheat macaroni
1 can (796 mL) diced tomatoes
1 can (540 mL) black beans, drained and rinsed
½ cup cheese, grated

*For vegetarian option, omit ground beef.

Directions:

  1. In a large pot over medium heat, add ground beef, onion and green pepper. Cook until ground beef is no longer pink.
  2. Add garlic powder, salt, black pepper, cumin, chili powder, water, macaroni, diced tomatoes and black beans. Increase heat to high and bring to a boil.
  3. Once boiling, reduce heat to medium-low and cover with lid. Cook for 10 minutes or until macaroni is tender. Stir occasionally to prevent pasta from sticking to pot.
  4. Serve in a bowl with grated cheese on top.

Tip

  • Around 9 months old, babies can pick up small pieces of food to feed themselves. Try the black beans, grated cheese, macaroni and ground beef pieces in this meal as finger foods for baby.
