Three Bean Salad
1 can (15-ounce) black beans, rinsed and drained
1 can (15-ounce) red kidney beans, rinsed and drained
1 can chickpeas, rinsed and drained
4 green onions, chopped (or 1/2 white or yellow onion)
2 stalks (1 cup) celery, chopped
1/3 cup apple cider vinegar
1 tablespoon white sugar
3 tablespoons oil
1 1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons dried parsley
1 teaspoon dried rosemary
- In a large mixing bowl, mix the 3 beans, onions, celery.
- In a separate bowl, mix together the vinegar, sugar, oil, salt, pepper, parsley and rosemary.
- Stir well to coat!
- Serve with tortilla chips or crackers.
