Three Bean Salad

Ingredients:

1 can (15-ounce) black beans, rinsed and drained
1 can (15-ounce) red kidney beans, rinsed and drained
1 can chickpeas, rinsed and drained
1/3 onion (3/4 cup) onion, chopped (green, yellow or red)
2 stalks (1 cup) celery, chopped
1/3 cup apple cider vinegar
3 tablespoons oil
1 tablespoon sugar, white
1 1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons dried parsley
1 teaspoon dried rosemary

Directions:

  1. In a large mixing bowl, mix the 3 beans, the celery, onion, vinegar, oil, sugar, salt, pepper, parsley and rosemary.
  2. Stir well to coat!

Serves 8

Tip:

  • Serve with tortilla chips. Serve over salads, put on tacos or make lettuce boats!
