Taco Soup

Ingredients:

1 Tablespoon oil
1 medium onion, chopped
4 cups water
1 teaspoon black pepper
1 Tablespoon chili powder
1 Tablespoon garlic powder
1 teaspoon cumin
1 teaspoon oregano
1/2 cup rice, uncooked
1 can (540 mL) black beans, drained
1 can (398 mL) beans in tomato sauce
2 cans (10 oz. or 284 mL) tomato soup (condensed)
1 can (341 mL) corn, niblets (not drained)

Directions:

  1. In a large pot, add oil and onion. Cook and stir on medium heat until onions are soft.
  2. Add water, black pepper, chili powder, garlic powder, cumin, oregano, and rice (uncooked). Increase heat to medium-high and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes or until rice is cooked.
  3. Add the black beans, beans in tomato sauce, tomato soup and corn. Simmer for 5 minutes. Serve with grated cheese and pita bread.

Serves 6

Tip:

  • Replace black beans with black eyed peas if desired.
