Raisin Bran Muffins

Ingredients:
2 cups bran flakes cereal
1 cup raisins
2 cups boiling water
3 bananas, mashed
¼ cup vegetable oil
2 eggs, beaten
½ cup sugar, white
2 cups whole wheat flour
½ teaspoon salt
2 teaspoons baking soda
Directions:.
- Preheat the oven to 350.F.
- Add bran flakes cereal, raisins and boiling water to a large bowl. Mix and let stand for 5 minutes.
- Add the following to same bowl: bananas, oil, beaten eggs, sugar, flour, salt and baking soda and stir immediately.
- Add sugar, whole wheat flour, salt and baking soda to the bowl. Stir the ingredients until just combined. Do not over-mix.
- Grease muffin tins well with oil, butter or margarine. (This is a better choice than using paper muffin cups, as the muffins tend to stick to the paper after baking.) Spoon batter into muffin cups until a little less than full.
- Bake for 15-20 minutes.
Makes 24 muffins
Tips:
- To test if the muffins are done, stick a fork or toothpick into the centre of a muffin and pull it out. If it comes out clean, the muffins are done.
- Overripe bananas make delicious muffins and banana bread! Peel your overripe bananas and store them in a freezer bag in the freezer. Thaw when ready to use.
- Whole wheat flour adds extra fibre. Use white (all purpose) flour if you don’t have whole wheat.
