Raisin Bran Muffins

Ingredients:

2 cups bran flakes cereal
1 cup raisins
2 cups boiling water
3 bananas, mashed
¼ cup vegetable oil
2 eggs, beaten
½ cup sugar, white
2 cups whole wheat flour
½ teaspoon salt
2 teaspoons baking soda

Directions:.

  1. Preheat the oven to 350.F.
  2. Add bran flakes cereal, raisins and boiling water to a large bowl. Mix and let stand for 5 minutes.
  3. Add the following to same bowl: bananas, oil, beaten eggs, sugar, flour, salt and baking soda and stir immediately.
  4. Add sugar, whole wheat flour, salt and baking soda to the bowl. Stir the ingredients until just combined. Do not over-mix.
  5. Grease muffin tins well with oil, butter or margarine. (This is a better choice than using paper muffin cups, as the muffins tend to stick to the paper after baking.) Spoon batter into muffin cups until a little less than full.
  6. Bake for 15-20 minutes.

Makes 24 muffins

Tips:

  • To test if the muffins are done, stick a fork or toothpick into the centre of a muffin and pull it out. If it comes out clean, the muffins are done.
  • Overripe bananas make delicious muffins and banana bread! Peel your overripe bananas and store them in a freezer bag in the freezer. Thaw when ready to use.
  • Whole wheat flour adds extra fibre. Use white (all purpose) flour if you don’t have whole wheat.
