Raisin Bran Muffins

Raisin Bran Muffins


2 cups all-bran cereal, flakes
1 cup raisins
2 cups boiling water
3 bananas, mashed
2 eggs, beaten
¼ cup vegetable oil
½ cup sugar, white
2 cups whole wheat flour
½ teaspoon salt
2 teaspoons baking soda


  1. Preheat the oven to 350.F.
  2. Add all-bran cereal, raisins and boiling water to a large bowl. Mix and let stand for 5 minutes.
  3. Add the following to the bowl: bananas, beaten eggs, oil, sugar, flour, salt and baking soda.
  4. Mix the ingredients until just combined. Do not over-mix. Grease muffin tins or use paper muffin cups. Spoon batter into muffin cups until 2/3 full.
  5. Bake for 15-20 minutes.

Makes 24 muffins


  • To test if muffins are done: Stick a fork or toothpick in the centre of a muffin and pull it out. If it comes out clean the muffins are done.
  • Use overripe bananas to make muffins and banana bread. Peel the overripe bananas and store in a freezer bag in the freezer. Thaw when ready to use.
