Oatmeal Breakfast Cookies
Ingredients:
1⁄2 cup Rolled Oats
1⁄2 cup Mashed Banana or Applesauce
1⁄4 cup Peanut Butter or Soy butter
1⁄2 teaspoon Vanilla Extract
1 pinch Salt
1⁄2 teaspoon Cinnamon
2 tablespoons Chocolate Chips or Chunks
2 tablespoons Raisins or Dried Cranberries
2 tablespoons Sugar or Honey
Directions:
- Preheat oven to 350°F.
- Mash the banana or applesauce with the nut/soy butter until smooth, then stir in all other ingredients until well-combined.
- Shape into cookies-can use a mini cookie scoop or drop with 2 spoons- and bake on a greased cookie sheet for around 15 minutes.
- Let cool 10 minutes before removing from sheet.
- Makes 10-12 Cookies
