Oatmeal Breakfast Cookies

Oatmeal Breakfast cookies

Ingredients:

1⁄2 cup Rolled Oats
1⁄2 cup Mashed Banana or Applesauce
1⁄4 cup Peanut Butter or Soy butter
1⁄2 teaspoon Vanilla Extract
1 pinch Salt
1⁄2 teaspoon Cinnamon
2 tablespoons Chocolate Chips or Chunks
2 tablespoons Raisins or Dried Cranberries
2 tablespoons Sugar or Honey

Directions:

  1. Preheat oven to 350°F.
  2. Mash the banana or applesauce with the nut/soy butter until smooth, then stir in all other ingredients until well-combined.
  3. Shape into cookies-can use a mini cookie scoop or drop with 2 spoons- and bake on a greased cookie sheet for around 15 minutes.
  4. Let cool 10 minutes before removing from sheet.
  5. Makes 10-12 Cookies

Tips:
These are great for an “on the go” breakfast! Make in advance, store in your freezer for a guick breakfast or snack.
