Minestrone Soup

Ingredients:
1 tablespoon oil
1 small onion, chopped
1 carrots, chopped
1 celery, chopped
2 teaspoons garlic powder
2 teaspoons parsley
2 teaspoons oregano
2 teaspoons basil
1 teaspoon salt
4 cups water
1 cup pasta, small shells
1 can (540 mL) navy beans, drained and rinsed
1 can (796ml) diced tomatoes
Instructions:
- Heat oil in a large pot over medium heat. Add onion, carrot, celery and all spices. Cook for 3 minutes until vegetables are soft..
- Add water to pot. Increase heat to high and bring to a boil. Add pasta and turn down to medium-high to simmer. Cook pasta for 10 minutes or until tender.
- Add navy beans and tomatoes. Return to a boil. Turn off heat and serve soup.
- Add chickpeas and cook for 5 more minutes or until they are heated through.
Serves 6.
Tips:
Add cooked ground chicken, ground beef or turkey
Use any type of small pasta instead of the shells: macaroni, broken up spaghetti, etc.
Kidney beans, ground chicken, and small cooked pasta pieces are nutritious finger food options for baby!
