Baked Oatmeal

Ingredients:
6 cups quick oats
1 1/3 cup brown sugar
4 teaspoons cinnamon
4 teaspoons baking powder
1 teaspoon salt
4 eggs, beaten
1/2 cup vegetable oil
4 teaspoons vanilla extract
2 cup milk
1/2 cup applesauce
Directions:
- Preheat oven to 350F (175C).
- In a large bowl, mix together quick oats, brown sugar, cinnamon, baking powder and salt. Use a fork to break up any lumps of brown sugar.
- In a medium bowl, use a whisk or fork to mix together beaten eggs, vegetable oil, vanilla, milk and applesauce.
- Pour the egg mixture into the dry ingredients in the large bowl and mix well.
- Grease a 9 x 13″ baking dish (or rectangular casserole dish) with oil or margarine. Pour the mixture from the large bowl into the baking dish.
- Spread mixture into pan and bake for 30-35 minutes, until golden brown.
- Cut into pieces and serve. Cover leftover baked oatmeal and store in the fridge for 3 to 4 days.
Serves 12-15
Tip:
– Top the baked oatmeal pieces with vanilla yogurt, or pour warm milk over top.
