Baked Oatmeal

Ingredients:

6 cups quick oats
1 1/3 cup brown sugar
4 teaspoons cinnamon
4 teaspoons baking powder
1 teaspoon salt
4 eggs, beaten
1/2 cup vegetable oil
4 teaspoons vanilla extract
2 cup milk
1/2 cup applesauce

Directions:

  1. Preheat oven to 350F (175C).
  2. In a large bowl, mix together quick oats, brown sugar, cinnamon, baking powder and salt. Use a fork to break up any lumps of brown sugar.
  3. In a medium bowl, use a whisk or fork to mix together beaten eggs, vegetable oil, vanilla, milk and applesauce.
  4. Pour the egg mixture into the dry ingredients in the large bowl and mix well.
  5. Grease a 9 x 13″ baking dish (or rectangular casserole dish) with oil or margarine. Pour the mixture from the large bowl into the baking dish.
  6. Spread mixture into pan and bake for 30-35 minutes, until golden brown.
  7. Cut into pieces and serve. Cover leftover baked oatmeal and store in the fridge for 3 to 4 days.

Serves 12-15

Tip:

– Top the baked oatmeal pieces with vanilla yogurt, or pour warm milk over top.
