Baked Oatmeal

Ingredients:
3 cups quick oats
1/2 cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup milk
Directions:
- Preheat oven to 350F (175C). Grease a square baking pan (8×8″ or 9×9″) with oil, or line with parchment paper.
- In a large bowl, mix together quick oats, brown sugar, cinnamon, baking powder and salt. Use a fork to break up any larger lumps of brown sugar.
- In a medium bowl, mix together beaten eggs, vegetable oil, vanilla extract and milk.
- Pour wet ingredients (egg mixture) into dry ingredients (oat mixture) and stir until just mixed together.
- Spread mixture into pan and bake for 20-25 minutes, until top of mixture is a golden brown colour.
- Cut or spoon baked oatmeal into pieces. Serve in bowls with vanilla yogurt or milk poured over top. Enjoy!
Serves 6
Tip:
– You can double this recipe to make a larger amount. In step 1 of the recipe, use a 9×13” (rectangular) pan instead of a square pan. Cook for 35-40 minutes.
– Top the baked oatmeal with fresh bananas or berries, or thawed frozen fruit for a boost of flavour and nutrition!
