Baked Oatmeal

Ingredients:

3 cups quick oats
1/2 cup brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup milk

Directions:

  1. Preheat oven to 350F (175C). Grease a square baking pan (8×8″ or 9×9″) with oil, or line with parchment paper.
  2. In a large bowl, mix together quick oats, brown sugar, cinnamon, baking powder and salt. Use a fork to break up any larger lumps of brown sugar.
  3. In a medium bowl, mix together beaten eggs, vegetable oil, vanilla extract and milk.
  4. Pour wet ingredients (egg mixture) into dry ingredients (oat mixture) and stir until just mixed together.
  5. Spread mixture into pan and bake for 20-25 minutes, until top of mixture is a golden brown colour.
  6. Cut or spoon baked oatmeal into pieces. Serve in bowls with vanilla yogurt or milk poured over top.  Enjoy!

Serves 6

Tip:

– You can double this recipe to make a larger amount. In step 1 of the recipe, use a 9×13” (rectangular) pan instead of a square pan. Cook for 35-40 minutes.
– Top the baked oatmeal with fresh bananas or berries, or thawed frozen fruit for a boost of flavour and nutrition!
