Easy Cheesy Egg Bake


4 slices bread
6 eggs
1 1⁄2 cups milk
1⁄2 cup cheddar cheese
Vegetables, chopped (try: tomatoes, onions, green peppers, red peppers, mushrooms, etc.)


  1. Preheat the oven to 400F.
  2. Grease the bottom of a 9×9 pan with margarine or cooking spray. Add bread to the bottom of the pan.
  3. In a bowl, add: eggs, milk, cheddar cheese, beat all ingredients together and pour over bread.
  4. Choose your favourite vegetables and chop into small pieces. Place in the casserole before it bakes or serve on top when the casserole is out of the oven.
  5. Place casserole in oven and cook for 20-30 minutes (or until the eggs are no longer runny).

Serves: 4


  • This is a good way to use up your day old bread.
