Chocolate Tofu Pudding

1 package (300 grams) soft tofu, drained
6 tablespoons cocoa powder
4 tablespoons white sugar
1/3 cup plain milk (cow’s/soy/almond)
1 tablespoon peanut butter
- Drain liquid from tofu container and discard.
- In a bowl, mix all ingredients together using a whisk or a fork.
- Store in an airtight container in the fridge for 3 days. The pudding may get a little watery on the top, just stir well before serving.
Makes 5 – ½ cup servings.
Try adding pomegranate seeds, sliced strawberries or chopped nuts on top!
