Chili Mac & Cheese

Ingredients:
0.25 kg (or 0.5 pound) ground beef
1 Tablespoon oil
1 medium onion, chopped
1 green pepper, chopped
2 garlic cloves, finely chopped (or 1 tsp garlic powder)
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon cumin
1 Tablespoon chili powder
2 cups water
1 ½ cups whole wheat macaroni
1 can (540 mL) diced tomatoes
1 can (540 mL) black beans, drained and rinsed
½ cup cheese, grated
Directions:
- In a large pot over medium heat, add ground beef, oil, onion and green pepper. Cook until ground beef is no longer pink.
- Add garlic, salt, black pepper, cumin, chili powder, water, macaroni, tomatoes and black beans. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes or until macaroni is tender. Stir occasionally.
- Serve in a bowl with grated cheese on top.
