Chili Mac & Cheese

Chili Mac & Cheese

Ingredients:

0.25 kg (or 0.5 pound) ground beef
1 Tablespoon oil
1 medium onion, chopped
1 green pepper, chopped
2 garlic cloves, finely chopped (or 1 tsp garlic powder)
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon cumin
1 Tablespoon chili powder
2 cups water
1 ½ cups whole wheat macaroni
1 can (540 mL) diced tomatoes
1 can (540 mL) black beans, drained and rinsed
½ cup cheese, grated

Directions:

  1. In a large pot over medium heat, add ground beef, oil, onion and green pepper. Cook until ground beef is no longer pink.
  2. Add garlic, salt, black pepper, cumin, chili powder, water, macaroni, tomatoes and black beans. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes or until macaroni is tender. Stir occasionally.
  3. Serve in a bowl with grated cheese on top.
