Chickpea and Raisin Rice Pilaf

Ingredients:
2 tablespoons oil
1 medium onion, diced
2 teaspoons turmeric
2 cinnamon sticks
2 ½ cups brown rice
1 cup vegetable or chicken broth
3 cups water
1 can chickpeas, rinsed
½ cup raisins
1 can tomatoes, drained
½ cup nuts or seeds (optional)
Directions:
- In a large pot, add: oil, onion, turmeric, cinnamon sticks. Cook on medium heat until onion is soft.
- Add: brown rice, vegetable or chicken broth, water, chickpeas, raisins. Stir everything together, then cover pot with a lid and turn heat down to medium-low.
- Cook for 30 minutes (until rice is tender and all liquid is gone).
- Remove cinnamon sticks and add: tomatoes, nuts or seeds.
Makes 8-10 servings
