Black Bean Brownies
Ingredients:
1/4 cup quick oats
1 can, 540g black beans, drained and rinsed
2 eggs
1/4 cup cocoa powder
2/3 cup sugar
1/4 cup oil
1 teaspoon vanilla extract
Pinch salt
1/2 teaspoon baking powder
1 cup, divided chocolate chips
Directions:
- Preheat the oven to 350⁰F.
- Place all ingredients except chocolate chips into a food processor. Pulse until combined and beans are blended.
- Mix ½ cup chocolate chips into the batter and pour into 8×8 inch pan. Top with the remaining chocolate chips.
- Bake 30-35 minutes or until toothpick comes out clean.
- Cool brownies and cut into 2-inch squares.
Makes 16 squares
