Beef and Barley Soup

Ingredients:
0.22 kilograms (or 1/2 pound) ground beef
1 small onion, chopped
1 stalk celery stalk, diced
1/2 cup pot barley
4 cups water
1/2 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
2 teaspoons garlic powder
1 teaspoon thyme
1/2 teaspoon black pepper
1 can (398 ml) mixed vegetable, drained
1 can (398 ml) diced tomatoes
Instructions:
- In a large pot add beef and onion. Cook and stir on medium heat until ground beef is no longer pink and onion is soft. Drain off any fat.
- Add celery, barley, water, salt, basil, oregano, garlic, thyme, black pepper. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes with lid on until barley is soft.
- Then add mixed vegetables and diced tomatoes. Simmer for another 5 minutes and serve.
Serves 6
Tip:
– Instead of using ground beef, try ground chicken or turkey.
