Beef and Barley Soup

Beef Barley Soup



0.22 kilograms (or 1/2 pound) ground beef
1 small onion, chopped
1 stalk celery stalk, diced
1/2 cup pot barley
4 cups water
1/2 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
2 teaspoons garlic powder
1 teaspoon thyme
1/2 teaspoon black pepper
1 can (398 ml) mixed vegetable, drained
1 can (398 ml) diced tomatoes


  1. In a large pot add beef and onion. Cook and stir on medium heat until ground beef is no longer pink and onion is soft. Drain off any fat.
  2.  Add celery, barley, water, salt, basil, oregano, garlic, thyme, black pepper. Increase heat to high and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes with lid on until barley is soft.
  3. Then add mixed vegetables and diced tomatoes. Simmer for another 5 minutes and serve.

Serves 6

– Instead of using ground beef, try ground chicken or turkey.
