Bean Burritos

Bean Burritos

 

Ingredients:

2 cans (398 mL each) Kidney beans, drained and rinsed
1 can (398 mL) Tomatoes, diced and drained
1 Tablespoon Chili powder
2 teaspoons Garlic powder
1 Tablespoon Cumin
1 cup Cheese, grated
1 bunch Green onions, chopped (optional)
10 large flour tortillas

Directions:

  1. Preheat the oven to 350F
  2. In a bowl, mash kidney beans with a fork or potato masher.
  3. Add tomatoes, chili powder, garlic powder, cumin and mix until combined.
  4. Add cheese and green onions to mixture.
  5. On each tortilla, spread 2-3 Tablespoons of bean and tomato mixture. Roll up each tortilla.
  6. Place tortillas on a baking sheet and bake for 15 minutes.

Serves 10

Tips:

  • Add lettuce, avocado and/or green peppers to burritos before rolling up.
  • You can spread the bean mixture on whole wheat toast instead of tortillas.
